Product description
Fruity. Clear. Wild fruity.
A cacao with a lot of presence: lively, clear and delicately fruity. Grown in the biodiverse dry forest of northern Peru, watered by rushing Andean rivers, harvested by smallholder farmers of the Norandino Cooperative, with whom we work directly. We produce the granules ourselves in Germany.
The bean
The Piura Blanco is a rare albino cacao variety, previously undiscovered anywhere else in the world. Experts believe that the Piura Blanco bean survived the extreme droughts in the Piura Valley through a genetic mutation. The cacao trees are native to the dry forest and get their water from mountain streams flowing down from the Andes. This award-winning albino cacao is one of the powerful and wise great-grandmothers of cacao.
Origin
From remote dry forests in northern Peru, from the villages of Paimas, Puerta Palache and Las Lomas in the San Lorenzo Valley, at the foothills of the Sierra Piura, Piura region. We are in direct contact with the Cooperativa Agraria Norandino, an association of over 7,000 organic-certified and Fairtrade-certified farming families. The cultivation areas are fully georeferenced and traceable down to the plot. No middlemen between the farm and you.
In what form does the cacao come?
In all packaging sizes from 35 g to 1000 g, the cacao is provided as granules, i.e., in small, uniform pieces instead of a solid block. The granules can be weighed out directly and dissolve quickly and evenly when stirred, without you having to grate or chop anything beforehand. Only the 17 kg size is deliberately supplied as a pressed block, because large quantities can be stored better this way. This 17 kg block form is its own variant of this main product and is independent of the separately available 5 kg block products. The granules do not always have to be dissolved in liquid: Many also sprinkle them directly over muesli, porridge or yogurt, for those who prefer to eat their cacao rather than drink it.
Taste
Bold, clear and lively, with distinct aromas of cherry, raspberry and a subtle hint of pecan. Soft finish, with a clarity that lasts a long time.
Goes well with morning rituals, writing and creative time, and for anyone who likes fruity flavors.
For whom
Morning rituals, mindfulness, yoga, meditation, gentle ceremonies. A cacao for people who prefer it light and fruity rather than dark and earthy.
Preparation
Heat 20 to 25 g of granules with 200 ml of hot water or plant-based drink to 60 to 70 degrees (do not boil), then stir or froth. For a ceremony, we recommend 25 to 30 g. You can find the detailed instructions with spices, sweetness and quantities for groups on the Cacao Preparation page.
