This coffee is harvested by the Jumarp cooperative in northern Peru. The coffee trees grow mainly around the cities of Jaén and San Ignacio and benefit from the shade, allowing them to develop slowly. It is a blend of Red Caturra, Red Bourbon, and Typica varieties, cultivated at altitudes between 1200 and 1800 meters.
This coffee is then decaffeinated by the Canadian company Swiss Water. The water decaffeination process is based on the principle of osmosis, in which two solutions separated by a permeable membrane equalize their caffeine concentrations – from the less concentrated to the more concentrated solution.
The most important economic source of income in the Jaén region is agriculture, with rice, cacao, corn, and, of course, coffee. The region enjoys one of the best climates in the Peruvian Sierra departments, with a temperate, dry climate characterized by sunny days and cool nights. The average annual temperature is 16°C, with a rainy season from December to March. The main varieties grown here are Typica, Caturra, and Bourbon. Jaén coffees are distinguished by their sweetness, notes of red and yellow fruits, and acidity.
